6 large egg yolks
¾ cup white sugar
⅔ cup milk
1 ¼ cup heavy cream
½ teaspoon vanilla extract
1 pound mascarpone, heated
¼ cup strong coffee, room temperature
2 tablespoons rum
2 3-ounce packets of cookies
1 tablespoon unsweetened cocoa powder

Prepare the filling: Boil the egg yolks, sugar, and milk until tender. Cool slightly, then refrigerate for about an hour. When the filling has completely cooled, mix it with the mascarpone. Prepare the whipped cream: Whip the cream with the vanilla extract until it forms a thick foam.
Dipping Cookies: Combine coffee and rum in a small bowl. Pour the mixture over the biscuits, which have been halved lengthways.
Assemble the tiramisu: Line the bottom of the mold with the soaked biscuits. Spread half of the mascarpone mixture over the biscuits, then half of the whipped cream. Repeat in the same order.Sprinkle with cocoa powder.
Instructions
Step 1
In a medium saucepan, beat egg yolks and sugar until well combined.
Step 2
Pour in the milk and cook over medium heat until boiling, stirring constantly.

Cook gently for 1 minute, then remove from the heat and allow to cool slightly.

Cover tightly and refrigerate for 1 hour.

In a medium bowl, beat cream and vanilla with electric whisk until stiff peaks form.

Remove the egg yolk mixture from the refrigerator; Add mascarpone and stir until smooth.

Combine the coffee and rum in a small bowl. Halve the biscuits lengthways and sprinkle with coffee. Arrange half of the soaked cookies in the bottom of a 7" x 11" plate.

Spread half of the mascarpone mixture over the biscuits, then drizzle with half of the whipped cream. Repeat the layers again.
Step 9
Sprinkle with cocoa powder.
Step 10
Cover and refrigerate for 4 to 6 hours.
